#Repost @saltboxseafoodjoint • • • • • • Fresh NC Mullet fillet in all it's glory! The beautiful part of this fish outside of the fillet is fat layer attached to the rib bones/ belly. We are going to hot smoke the NC Mullet and what happens is that fat renders and a self basting process occurs. This process helps to ensure that the fish maintains moisture and doesn't dry out. We will be shingling the fish on the smoker so that there will be a domino effect when the fat melts. I'm not sure what recipe I plan to do yet, but I will keep you posted. @nccatch @saltycatchseafoodco #durhamight #🐂💪🏽
